There was a similar bug report in 2021: Braces are not rendered in MathJax in the preview of a question And again in 2024: Missing brackets in $\{x\}$ in drafts, not missing in the final question/product On Mathematics Meta (in 2020): Escaped braces do not render in post preview.

A wild guess where this comes from: the citation helper Based on nothing but the problem ought to be recent and this being a recent changed. And the problem being only present on MO, at least not on math.se and matheducators.se, (neither having the citation helper).
